Recipe 1- roasted:
Chop and roast on a tray in a low / moderate oven with onions, peppers and perhaps chilli and rosemary until the vegetables start to brown. The resulting mixture can be just eaten accompanying vegetables or works well mixed with couscous, bulgar or rice to make a warm or cold salad.
Recipe 2- with parmesan:
Par boil the quartered fennel for about 5 minutes, until al dente. Arrange in a single layer on a buttered baking tray or dish. Cover liberally with grated parmesan and roast until to parmesan starts to brown. Arrange on a plate with a sprinkle of chopped leaf for style.
