braised artichokes with broad beans and mint

Ingredients
4 globe artichokes
juice of 1 lemon
3 tbsp olive oil
1 clove garlic, crushed
a handful of broad beans
1 tbsp mint, chopped
salt and pepper
Instructions
To prepare artichokes – snap off the stalks, then peel or break away from the base the tougher outer leaves until you are left with the pale inner heart.
Scrape away the prickly choke and cut the artichoke into sixths or eighths. Place in cold water with added lemon juice to stop artichokes going black.
Heat oil over a high heat. Add the artichoke wedges and stir constantly until they start to brown, lower the heat.
Add crushed garlic, a few tablespoons of water and season. Stir. Cover and cook for about 10 minutes until artichokes are cooked through. Blanch the broad beans and add to artichokes. Add mint. At this stage, parsley, dried chilli & good olive oil may be added.
To make it go further you can add frozen peas with the broad beans.
