fennel gratin

Preparation Time: 5 minutes
Cooking Time: 1 hour

Serves: 3

Ingredients

4 heads fennel trimmed and cut into six wedges
100ml double cream
1 teaspoon finely chopped rosemary
2 cloves garlic, crushed
1 tablespoon freshly grated parmesan

Instructions

1. Preheat oven to 180C.

2. Cook fennel in boiling salted water for about 5 minutes until just cooked through. Drain well.

3. Heat cream in a pan with rosemary and garlic until it just comes to the boil. In a bowl, mix cream, the fennel and half the parmesan.

4. Place the mixture in a gratin dish, cover and bake for 30 minutes.

5. Take off the cover, sprinkle with parmesan, turn up oven to 200C and cook until top is browned (about 10 minutes).
