Cabbage salad with anchovy sauce
Serves: 2
Ingredients
dressing:
1 clove garlic, crushed
1-2 anchovy fillets, chopped
pinch salt and black pepper
1 tsp red wine vinegar
2 tbsp extra virgin olive oil
1 tbsp freshly chopped parsley
Instructions
A lovely alternative to traditional coleslaw, this would be a great accompaniment to grilled fish or chicken.
Slice hispi cabbage and set aside. Whisk together the dressing ingredients and dress cabbage very well and leave for at least 45 minutes before serving.
