watercress soup

Preparation Time: 15 mins
Cooking Time: 25 mins

Serves: 4

Ingredients

1 medium onion
250g potatoes
2 tbsp oil
1 bunch watercress
600ml veg stock
150ml milk
1/2 tsp grated nutmeg
salt & pepper

Instructions

1. Chop the onion and potatoes and saute in hot oil until the onion is transparent. Add the chopped watercress and cook for a further 3 mins.

2. Add the stock, nutmeg and seasoning. Cover and simmer gently for 20 mins until the potato is soft.

3. Cool slightly and blend in a liquidiser until smooth. Stir in the milk and reheat gently before serving.
