purple sprouting broccoli with anchovies

Ingredients

500g psb trimmed
5-6 anchovy fillets
2 tbsp olive oil
2 garlic cloves, thinly sliced
½ red chilli seeded and chopped

Instructions

Cook the broccoli in salted boiling water for 5 minutes. Meanwhile, chop the anchovy fillets. Heat oil in a pan and cook garlic and chilli for 1 minute. Before the garlic browns, add the anchovies, remove from the heat and mash with a wooden spoon until they have almost completely disintegrated. Drain the broccoli and add to the anchovy pan. Mix well and cook over a low heat for a further ten minutes, stirring occasionally. Serve immediately. This dish makes an ideal accompaniment to grilled fish or lamb.
