courgettes with saffron, pine nuts & raisins

Ingredients
700g courgettes
3 tbsp olive oil
1 onion, thinly sliced
50g raisins, soaked in warm water
2 tbsp pine nuts, lightly toasted
pinch saffron, soaked in 3 tbsp - of boiling water
salt & pepper
Instructions
Cut the courgettes into quarters, lengthways. Remove any spongy seeds and then cut each quarter again in half lengthways.
Cook onion in olive oil slowly for about 20 minutes until golden. Remove from the heat.Drain the oil from the onions, put onions to one side and return the oil to the pan. Turn up heat, when oil is hot, add courgettes and cook for about 5 minutes until just tender.
Add onion and saffron water, drained raisins and pinenuts. Cook for a few minutes until the water has almost evaporated. Season with salt and pepper and serve.
