courgettes stuffed with spicy rice

Serves: 4
Ingredients
500g courgettes
3 pints water
½ tsp salt
for the stuffing:
110g uncooked basmati rice
3 tbsp olive oil
2 cloves garlic, finely sliced
1 onion, finely sliced
½ tsp each of chilli powder, paprika, ground coriander & ground cumin
1 egg
salt and pepper
Instructions
1. Heat water with salt. When boiling, add whole courgettes, and boil for 3 minutes. Remove and drain.
2. Wash and drain basmati rice. Bring the water up to the boil again, put in drained rice and boil for 8 minutes. Drain rice.
3. Cut courgettes in half lengthways and with a small spoon scoop out some of the flesh, chop finely and reserve. Fry the garlic and onion in oil for 2 minutes.
4. Add spices and courgette flesh and cook for 2 minutes more. Add the rice, mix well and cool. Next add an egg, mix well together.
5. Arrange courgette halves in an ovenproof dish and spoon rice filling into them. Cover with foil and bake at 180°C for 25-30 minutes.
