asian coleslaw

Preparation Time: 10 minutes

Serves: 2

Ingredients

1/2 cabbage
3 carrots
2 apples
1 red pepper
beansprouts
mushrooms
tomato
2 tbsp roasted peanuts

For the dressing:
1 clove of garlic
1/2 onion
1 chilli
3 tsp fish sauce
1 1/2 tbsp brown sugar
3 tbsp lemon juice
dash sweet chilli sauce

Instructions

1. Finely shred the cabbage, grate the apples and carrot, slice the peppers and mushrooms and chop the tomato. Crush the roasted peanuts.

2. Finely chop the onion and chilli and crush the garlic clove. Add these ingredients to a bowl along with the fish sauce, brown sugar, lemon juice and sweet chilli sauce. Whisk the dressing ingredients together in the bowl and set to one side.

3. Add the raw vegetables to the bowl with the dressing and toss until all the vegetables are evenly coated.

4. Pile the contents of the bowl onto a serving plate and sprinkle with roasted peanuts.
