tahini dressing for salad
Serves: 4
Ingredients
2 garlic cloves
3 tbsp tahini paste
juice of 1 lemon
5 tbsp water
salt & black pepper
dash of good olive oil
pinch of allspice
chopped parsley (optional)
Instructions
A thick dressing more suited to cos, tomato and cucumber salad or alternatively can be used on roasted/grilled vegetables.
1. Crush the garlic cloves to a paste with 1/2 tsp salt either with a pestle and mortar or using a large knife.
2. In a mixing bowl mix the tahini with the garlic paste and the lemon juice. Add water until you have a dressing the consistency of double cream. At this stage add a splash of good olive oil and allspice to taste then check the seasoning
3. Add chopped parsley or other herbs and serve with a salad or roasted/grilled vegetables.
