stir-fried psb with garlic miso sauce

Serves: 4

Ingredients

3 tbsp olive oil
6 garlic cloves, coarsley chopped
1 tbsp yellow miso
1 inch piece of fresh ginger, grated
450g purple sprouting broccoli/calabrese
1 chilli, de-seeded and thinly sliced

Instructions

If you don’t have purple sprouting broccoli in your box this week, we recommend using calabrese as a substitute.

1. Heat the oil in a large, heavy pan over a high heat.

2. Add the garlic and sauté for a couple of minutes until it starts to turn golden.

3. Add the ginger, miso and enough water to form a smooth paste.

4. Add the chilli and vegetables to the pan and sauté until they are cooked, but still crisp.

5. Season and serve with noodles.
