quick leek omelette

Preparation Time: 5 minutes
Cooking Time: 5-10 minutes

Serves: 1

Ingredients

leeks
2 eggs
wholegrain mustard
chedder cheese

Instructions

1. Chop the white ends of leeks coarsely, blanch for 4 minutes (using boiling water from the kettle).

2. Stick them in a 2 egg omelette with a good dollop of wholegrain mustard and equally unobliging cheddar cheese.
