grilled courgettes, red pepper, tomato & bean salad

Ingredients

200g dried cannellini
or haricot beans
extra virgin olive oil
2 courgettes
1 red pepper
punnet cherry tomatoes
1 bunch basil
salt
1 clove garlic

Instructions

This is one of my perennial favourites and has made a welcome return to the field kitchen for the Summer. It’s a perfect addition to your summer BBQ - why not try it next time the sun is shining. Soak the cannellini or haricot beans overnight. The following day, cover them with water and simmer until tender. Drain, season and dress with 2 tbsp of extra virgin olive oil. Slice the courgettes into 1/2cm thick ribbons and the red peppers into 2cm strips and coat with olive oil and griddle until coloured. Roast the cherry tomatoes in a little olive oil for ten minutes. Next add the basil leaves, garlic and a large pinch of salt with 100ml of olive oil to a processor and whizz until blended. Mix the cooked beans, courgettes, pepper and tomatoes together gently in a large bowl. Add the basil dressing to taste and season.
