cabbage and lentils with chilli and coriander

Serves: 4

Ingredients

1 large onion chopped
2 cloves of garlic crushed
5-15ml chilli oil
45ml Olive oil
salt and pepper
500g of Hispi cabbage
300g cooked brown lentils
Juice from half a lemon
handful of coriander chopped

Instructions

1. In a large sauce pan, sweat the onion and garlic in the chilli and olive oil for minutes until soft. Add the cabbage, salt and pepper and cook stirring briskly with a wooden spoon until wilted.

2. Add the lentils, lemon juice and coriander, still stirring over the heat. Taste and check for seasoning.
